I don't because I'm normally not that much of a soup fan but she does yes.

I recommend steamed grass carp belly. Just season it with soy sauce, ginger, spring onion and some oil. It's really simple but my mother used to make it for me as a toddler and it's one of my favourite foods.
For soup, carrot soup or salted egg and hairy gourd soup are pretty good.
Any chance you could get hold of some preserved sausages? Just throw one of each lap cheong, yun chang into the rice cooker and it'll make a dish as well as give the rice a really good flavour.
I forgot to mention that for blanched vegetables choi sum, gai lan and napa cabbage should be the most popular Cantonese staples. You can go simple with just oyster sauce on choi sum or gai lan, but you can make a soup dish of napa cabbage, cellophane noodles and dried prawns in chicken stock.
My english is a bit confusing but I hope that helps.

No, but it is understandable why you think that. Chinese grammar is very simple when compared to latin languages. For one, you don't need to worry about tenses. There are rules though.

There certainly are grammatical rules. At the beginner's level of Chinese, it's rather simple, though as you get into intermediate and advanced topics, the grammar does definitely get more complex.

We can't speak Chinese nor Korean at all.
I can't write proper International Classical Chinese, maybe Chinese people can't neither.

Tap water is safe, but I am a clean freak and I boil it before drinking.
HK street food at stalls should be fine but I cannot guarantee the quality of cart hawkers. Sweet potatoes and quail eggs sold at carts should be fine.
It depends how many people you are cooking for. Are you staying for a long time? It is obviously cheaper to cook by yourself but HK has a lot of restaurants that may not be a lot more expensive than home cooking. Ingredients should be cheapest from a nearby wet market but supermarkets are sometimes even cheaper.

Yes hanzi binds east asia together like latin binds Europe together. I don't think Chinese people can write classical Chinese either. My knowledge of hanzi was very useful when learning Japanese. Can you understand parts of Chinese news like we understand parts of Japanese news?

That is a big issue too for China. If the central government do not wish to alienate Taiwan and HK even more they must readopt traditional characters. Although it may not seem important it is one of the obstacles that make improving cross-strait relations so difficult.
Chinese simplified characters are even more different from traditional characters than Japanese simplified characters. They preserve too little.
