I40 just drags on through Tennessee, Arkansas, Oklahoma, and Texas. It doesn't help that the road in those states is absolutely atrocious

It's better than taking the I 20 through Texas, or going through the Rockies, but I think I preferred driving through Missouri and Kansas before hopping back on the I40, rather than taking it the whole way
As for places on the road, the Route 66 casino just west of Albuquerque has a pretty good buffet, but I advise that you avoid the places that have a million billboards in NM and AZ.
Also if you don't mind taking a detour, once you hit Kingman take the US93 north and it will take you directly to Las Vegas, then you take the I15 south to go to LA
