I'm not exactly sure how I would go about recording people's ethnicities but the places of origin of their ancestors would be a good start.

Not in the modern sense, Hispanics are people who come from Castillian speaking countries. So Brazilians are not hispanic. Latino is the term for people from Latin America, regardless of ethnicity. So Bryjan Pachamama from Peru, Augusto Mafiosi from Argentina, Alberto Barbosa from northern Brazil and Germano Struddelmuncher from south Brazil are all Latinos.
