Taiwan is a sovereign country and most of the politicians here admits that. Though they can't say that explicitly because of the relation agreement signed between Japan and the PRC in the 70's. Prefer to have better relations with ROC than PRC really.

Because Taiwan is arguably a rebel province. The PRC is a descendant of what was the original Republic of China. Unless you think owning 2% of China makes you China, Taiwan is not inheritor of the original RoC's sovereignty.
This is the understanding of 180/196 nations. But most of the rest simply don't recognize the RoC because we want the PRC to not go and retake it. It's questionable if America and friends would respond.

Taiwan is a nice thorn in China's side.
But Taiwan is meaningless in comparison to China.
We don't really care about what happens to Taiwan.
What we do care about is crashing the world economy and permanently ruining all relations with the PRC.
So we play a balancing act of "promising" de facto control to Taiwan, and "promising" de jure control to China.
If in a decade China decides to take back Taiwan, I doubt we will intervene.
But our plan is to keep China from attacking for as long as possible. Therefore we use our economic and political ties to keep China from deciding to pull the trigger.
