It's not really to do with any love for the UK, it's that from a design perspective the Union Flag is a objectively a striking design. Ideal for fashion etc. You have the red crosses, accentuated by white around it, against the dark blue background. The effect is for the crosses to "jump out" at the viewer, which is what makes the flag popular. It catches attention like few other flags can. It is simple graphic design, we shouldn't feel too special about it ourselves
