Well, probably the biggest problem is that large-scale agriculture made living for large predators impossible in Europe, so deer, roe deer, wild hogs and rabbits breed like crazy.
If there wasn't anyone to keep their population in check, they'd overpopulate very soon, which in turn would lead to them dying out en masse due to starvation and natural selection not doing its thing.
When winter is especially harsh and hunters see that large numbers of animals starve to death, they actually go out and leave grain for the animals. Again, a harsh winter wouldn't really be a problem if large uninterrupted forests still existed, but they don't.
The bottom line is that extensive agriculture made European ecosystems extremely imbalanced and vulnerable, to the point where you'd see waves of extinction without human interference.
