jam is jam.
jelly is fruit juice, sugar, and added pectin
pectin is what makes jam and jelly clumpy/wiggly, its related to gelatin, which is what jello is made out of.
The amount of added pectin in jelly actually makes it appear and behave similar to jello (which is called jelly in england, which is why they always get confused). The interesting thing to note is just that though, in both countries jelly is referring to a fruit flavored jiggly substance, its just that its pectin based in the US, and gelatin based in the UK. Of course the taste is different, jelly basically tastes like jam, but its not just some random word replacement and you can see the continuity and how it all makes sense when you see it wiggling in your spoon
