It's said that the word Jedi came from a Japanese word, Jidai, which means age, era or period.
Samurai films are called Jidai-geki, literally, "period dramas" in Japan, and as Lucas is known as a fan of Kurosawa, Jedi Knights seem to be the implication of Jidai(geki)'s warrior = samurai. Also there are lots of homages to samurai films in SW.
