It's not the same thing, the process is the same but the produce is not. Wine grapes in Champagne grow differently to wine grapes elsewhere, it's like how no Whiskey tastes like Scotch Whisky, the environment is unique and creates a unique flavour

Buffalo wings are a recipe, whereas champagne comes from the region of Champagne, its taste comes from the grapes of the area, the soil, the climate specific to that region etc. So obviously something made elsewhere wouldn't be champagne.
But Buffalo wings are a only recipe, we can call something "quiche" even if we didn't make it in Lorraine, its traditional region.
