Like it or not but there are many foreign expats in Poland in big cities(especially from Southern Europe).
Socially they're completely fucked if they don't speak polish because polacks never bother to speak english in their own social circles (even if there's a foreigner). I've seen many instances of this

Yeah, I've had this happen to me, and I'm not even an expat.
I'm the only member of my entire extended family that wasn't born and raised in Poland. My ability to speak Polish is shit as a result (though I can understand it to a reasonable degree). My close family doesn't mind; they put up with my broken responses because they know that I'm not used to it.
Got invited to my cousin's wedding a few months ago. At the wedding reception, I was ignored by everyone my age because I was an outsider who couldn't speak properly and didn't know the customs. Only person I got to talk to was a second cousin who was pretty well versed in English.

I'm Catholic so I"ll end up visiting a bunch of churches and I'm going to world youth day, but before that I'll be traveling through the country. I'm planning on spending 8 days in Warszawa, Wroclaw, Krakow, and two small cities or villages.

This is a very good example. There is no universal definition of rude. Americans are pretty sensitive and we tend to smile a lot, make small talk, and acknowledge strangers.

this summer, my friend and I would throw the rugby ball to one another in the alleyway next to his flat. It didn't matter that it was concrete, because it was sunny every day. We would chill, have a few beers, watch music videos, play mario kart, but our favourite activity was throwing the rugby ball like you would an american football. Why, I don't know, but it was something to do, and it felt like we were learning a unique skill that nobody else has over here.
Being an alleyway, it was quite narrow. On entering, to the right are the flat doors embedded in the side of the building, which is an ex-pub. On the left is a council house behind a fence. Their garden consisted of two tiers. The first tier, or inner tier, is his "real garden", with a high fence, BBQ, deck chairs, and cigarette butts, is gated-off. The second, outer tier, is an unkept pathway made of broken slabs and overgrown with nettles and brambles. It was not gated off.
Sometimes during our intense fun throwing the ball, it would sometimes inevitably bounce funny, or get deflected off of one of our hands, and bounce into the outer tier (it had a low fence). When this happened, we would hop the sturdy picket fence, or would walk around it and pick it from the brambles, and be on our way. we didn't think anything of it at the time.
One time, however, it landed in his inner garden. The curtains shuffled. Being as it was me who was the bellend who knocked it over, I went to knock on his front door.

I purposely didn't use the word definition because I agree there isn't really universal defintion. Oxford defines it as someone who acknowledges the superiority/inferiority of different races.
By that definition I would be a racist, as I do believe in average difference in races from a purely biological perspective and some being better than others at certain things.
But I think the behavior of the Poles described as racist would be considered racist, regardless of what definitions there might be in a dictionary.

That's why we have to look at the behavior. Poland is like 98% white. There are some Polish people who've legitimately never seen black people. Bigot is definitely a meaningless buzzword. Xenophobia is a real thing, but there is nothing wrong with it. Fear of unknown cultures is perfectly rational. If you don't know what you're dealing with, it can be good to stay safe. That doesn't mean you hate them as people, you just simply don't know who they are, so you stay safe. Racism is a thing, but it's been turned into a buzzword since everything is racist now.
