I don't really get this meme that americans cook their steak less, that's definitely a newer stereotype since it used to be the french. Rare is common in europe too in general
Also if you're in a first world country with good health regulations, there is absolutely no excuse, never cook beyond medium rare, and preferably go rare.

My grandpa used to order these things called "Cannibal Sandwiches". He's not even American, either.

He's honestly right, though.

That being said, Anthony Bourdain actually shed some light on this in one of his shows, apparently, there's a practice by American chefs called "saving for well", where they save the worst cuts of beef for those who ask for well done, because, honestly, you won't be able to tell the difference anyway.

>People who order their meat well-done perform a valuable service for those of us in the business who are cost-conscious: they pay for the privilege of eating our garbage. In many kitchens, there’s a time-honored practice called “save for well-done.” When one of the cooks finds a particularly unlovely piece of steak—tough, riddled with nerve and connective tissue, off the hip end of the loin, and maybe a little stinky from age—he’ll dangle it in the air and say, “Hey, Chef, whaddya want me to do with this?” Now, the chef has three options. He can tell the cook to throw the offending item into the trash, but that means a total loss, and in the restaurant business every item of cut, fabricated, or prepared food should earn at least three times the amount it originally cost if the chef is to make his correct food-cost percentage. Or he can decide to serve that steak to “the family”—that is, the floor staff—though that, economically, is the same as throwing it out. But no. What he’s going to do is repeat the mantra of cost-conscious chefs everywhere: “Save for well-done.” The way he figures it, the philistine who orders his food well-done is not likely to notice the difference between food and flotsam.

If you're worrying because of parasites, don't. It's only a concern IF you bought it from a shady seller AND did not freeze the meat AND did not inspect it beforehand. Then odds are you'll get some taenia inside your intestine, big deal, a laxative does the trick

On the other hand... eat poorly washed veggies and the same taenia will see you as it does the pig, and will allocate itself in your flesh. Maybe your brain.

TL;DR: raw pork is safer than lettuce.

>>

So our taste is much closer to that of argentineans than that of americans, we can't complain

Medium or medium rare is the best way to cook a steak, Ill eat every other meat cooked to the max besides steak. I grew up eating slabs of charcoal until I went to a restaurant and got a steak medium when I asked for well done, too beta to return it I ate it and discovered it was fucking delicious.
Not only did it taste good but the texture was also important, the steak just melts in your mouth and is soft to chew. I remember hating steak because I would chewing it for so long and because it tasted like charcoal.

My advice is to just try it, everyone I know who likes well done has not tried anything else and refuses too.
I cooked steak today and I only cooked each side for 1 and a half minutes.

Also.

If you like raw meat, that's fine; but then don't bother claiming the meat is cooked.

A "good" cooked meat should be juicy, but not chewy; the outside needs to be sealed, both to avoid juices leaving AND for that tasty Maillard reaction. For that, something between medium and medium rare-ish is the best; anything less and it's chewy, anything more and it's hard.

If you can't eat raw beef without any health risks, then you're either a poorfag or live in a third world shithole and you should gas yourself.

That being said, medium-rare is objectively the best way to cook a steak and OP's pic is indeed undercooked. It also looks like it hasn't been rested long enough prior to cooking, because there's a really sharp colour gradient. It's probably cold in the middle.

>>51534334

We export most of our meat so I don't think that's the issue.

>>
>>51534457
He is making a point the meat is so tender it can be cut with a spoon, his problem is that that is clearly a medium-rare or a rare steak
>>
>>51532845
Rare meat is repugnant in Argentina because they do not let it mature enough.
Anyhow on overall meat quality has been going down a lot in Argentina in the past 10 years. Now, unless you go to a very fancy restaurant or pick the live animal at.the bottom of the pampa, you mainly eat reformed cow or intensive-bred cater.
The fact that you burn the remaining pieces doesn't help.
Mollejas are godly though.

Nowday Brazil makes better meat on average, while the US and Argentina in high end restaurant have the best steacks.
I was also agreeably surprised by French high end cuts.
>>

Maturation and fat content are more important than cooking when it comes to tenderness.

Tldr: you could cut a one dollar beef patty with a spoon too, it just means its a textureless piece of shit. Also this steack is medium.rare, making your whole point about cooking moot
