During middle school and high school (gymnasium) we learn about Holocaust-related topics like WW2, the German occupation of Denmark and the "feel good" story about how we saved Danish Jews by sending them to Sweden in 1943.
But surprisingly we don't learn about the Holocaust itself or the systemic targeting of Jews.

We don't? Sure, it's been some years since I left school, but I'm fairly sure I remember being taught about the Holohoax in Folkeskolen. Maybe I'm misremembering, though.
If you learned about kristallnacht or Auschwitz (which you obviously did) then you learned of systemic targeting of Jews. The curriculum is only so long and history is based on fact, not emotion.
I guess we learnt something about it, but definitely on the western European scale. We focused more on our own deportations.

It was so tiring to learn about the Holocaust. So fucking boring tb.h, a huge subject (WW2) and they focus on that shit.
At least we had a Muslim kid who would make it fun by basically denying the Holocaust every week.

Fact of the matter is we literally had to read books about the Holocaust and Anne Frank's nonsense etc. while we weren't taught anything about WW2 (Eastern front, Pacific War, Desert War, etc.). It's just stupidly imbalanced. Nobody took it seriously after a while, not only the Muslim kid but everyone started to crack jokes about it.
It isn't exclusive for WW2 though, pretty much the only thing we learn about our colonies (especially Indonesia) is muh bad treatment of the natives. We had to read books about that too.
There are important and relevant lessons to learn from the Holocaust, but throwing shock imagery and holocaust horror stories down students throats causes not only dissonance in the students who are learning it, but also makes a mockery of what we are trying to remember.
All my childhood we were shown photos of piles of dead people, stories about atrocities. You become desensitized to it eventually.
When I was 21 I went to Yad Vashem for the first time, and it was probably the only truly fitting memorial for the holocaust I've been at. The place is about remembering the actual people, their everyday lives, the politics. Not turning them into some gore porn for someones political agenda.

I actually happen to know a bit about this. Specifically, most Romanian Jews came there in the 19th century to escape pogroms in Ukraine and for the most part, they just viewed Romania as a moneymaking opportunity. Very few of them could speak the language and none had any interest in Romanian history or culture. They owned a large percentage of small businesses, moneylending outfits, and taverns as well and it basically caused a lot of butthurt.

During WWII, Romania was deporting Jews so furiously that the Germans actually requested they slow down a bit. But after 1943 when it was clear that Germany was losing the war, Bucharest ceased deportation of Jews, although at least half the country's Jewish population had been lost by that point.
