I read a thing once from an author who was having his books optioned for movie adaptations where he said that Hollywood production companies tend to spread cost and gross takings around in such a way that there is effectively no "profit" made, and as such taking a deal for payment in a portion of the profits was often a way to get no money in your hands.

You have to get 'gross points' not 'net points' that's the problem a lot of people signing contracts don't understand. The net profit will be zero, due to shady accounting (Harry Potter moves for example have zero net profit) but the gross profit will actually be what the movies made in box office sales. Though many production companies say in the contracts that opening weekend profits are exempt from gross points.
Also if you are a nobody just starting out your chance of being able to negotiate 'gross points' instead of 'net points' is nonexistent. Big established names however easily get gross points and make huge bank from that after a films release.

Money up front is always a great idea unless you are an established name and have a good agent and lawyers. Then you will literally bathe in the tons of back end money you will make. When the South Park movie was made Parker & Stone I don't think were established enough (or still too naive) to get a fair deal.
