on the far right is a power supply that is powering the box furtherest on the left
second box from the right is the power supply for the emmeline 2 valve amp that is third from the right

I don't know what the box on the far left does but the blue cables coming out of it are audio input into the valve amp
it also has what looks like an optical line in (the grey plug)
it might be a receiver or digital to analog converter

the head phones are possibly connected to the valve amp directly
and the optical line in could be connected to the mac book

Your phone uses noisy switching power supplies internally for generating its power rails. Using linear regulators would drain the battery in no time and make your phone red hot. Meanwhile, that system uses linear power supplies for both the DAC and the amp, since power consumption and heat dissipation aren't as much of a problem as having noise in the output.
That being said, the system in OP's picture is retarded. It is connected to the computer via TOSLINK, limiting the resolution to 16-bit and the sample rate to 44,1KHz, the outputs of the DAC are balanced XLR connectors, but the inverted part of the signal is thrown away because the amp uses unbalanced RCA inputs. The tubes resonate at certain frequencies (microphonics, look it up), making the frequency response cureve non-linear.
I could plug those headphones into my $50 system (Behringer UCA200 DAC, Unitra WS 330 amp) and get objectively better sound.
