Due to package naming changes the updater.ps1 script needs a modifycation.

You can either change "latest" to "update" manually or run
the folowing line in powershell inside mpv install dir:

You should compare yourself, one advantage of mpv is that you can use the exe without installing anything and a single line in the config file can produce results comparable to a codec pack you have to install and probably keep up to date. I never used MPC-HC with codec packs but out of the box mpv has less jarring color gradients and more natural saturation. That's not technical of course but even a borderline illiterate Wintard like me can use mpv.

How do I stop this from happening?
In the beginning if I fullscreen the video, it doesn't fix the video size before I hit play again. Also when in fullscreen if I hover over the buttons at the bottom, my screen flickers and the video lags out.

I think you're confusing keepaspect-window=no with keepaspect=no, keepaspect-window=no only draws black borders on the side when the monitorsize is larger than the window size. I've changted it to yes with the same result.

To add more information to this, the video itself was still ugly but the window wasn't maximized to the full monitor size.
I've tried the video in vlc and it worked fine.

Try turning off hardware decoding (
hwdec=no
).

If that fails, cut and paste your config to somewhere (like your home folder) temporarily, then make a new config using one of the other configs posted ITT. If that doesn't work, then try using no config whatsoever. If either of those approaches fixes it, then the problem is something in your config, in which case you should try commenting out bits of your config and re-opening the video in question until you figure out which option is causing the problem.

As far as I know, there is really no reason to use hardware decoding in the first place as the results of it are almost always worse (also, I don't think it can handle 10 bit video).

I wish the manual made that a bit clearer. To the average pleb, hardware decoding sounds like it should be a good thing, when in reality it should only really be used on laptops. I use hardware decoding on my laptop, not because of lower power consumption, but because the processor is so shit that with sw deciding, it would lag on many 720p movies that went over 4GB, even when I exit all the programs now I can play 1080p videos with chromium and several other programs open all at once with minimal dropped frames.

I honestly should have used it a long time ago.

AFAIK if you use VAAPI you can use the "motion-adaptive" and "motion-compensated" method. VDPAU allows "temporal-spatial".

It forces your subtitle styling on subs which have already been styled.

The point of the subtitle styling options is really to pretty-up subs which haven't been styled. The only time you should force it on styled subs is when their styling is very ugly.

The manual is perfectly clear. The only part which I can see confusing anyone is the vo= line.

Everything in the opengl section goes in the
vo=opengl
(or
vo=opengl-hq
) line and is separated by :.
e.g.

Everything not in the opengl section goes on its own line.

MPV saves the state of how the video was left to "remember play back position" they don't save only where you left the movie playing at, it's basically a save state kind of like what you do with an emulator.
