For nearly anything besides movies and a subset of games, having a vertically cropped workspace is a productivity killer.
Get a 2560x1440 instead of 2560x1080 or a 3840x2160 instead of 3440x1440.

Needs to be sufficiently large in order to not be shit. You can fit 3 good-sized windows, sure, but if it's small, the screen will be uncomfortably short.

I use a smaller 21:9 that I got recently. Like most things once you get used to it it's not very life-changing. A nice big 3440x1440 one seems like it would be super comfy though.

You'll have to get a 3440x1440 model for it to not be garbage in vertical screen space.
Then you'll probably want a 100hz refresh rate which leaves you with like 2 models and they are over $1k.
