Oh they are color displays, they just have a special Grayscale mode for showing xrays and medical stuff like that.
We've been getting our x-rays in color for decades. I don't know if I should laugh or cry.

I think it was a joke, like, our bones are white, and it's a black background, so for all we know they could have been "in color" the whole time and we wouldn't know the difference.
