why do we not have cheap keyboards (without fancy meme switches) that have flat e-ink key caps?

I like the idea but I don't think it'd be cheap. Every key would have some kind of electronics and that'd probably cost a lot to produce. What I don't get is why every decent cheap mechanical keyboard has a shitty font (my keyboard included)

I get it. I use software with a ton of keyboard shortcuts every day.
It's less hassle to just learn what the shortcuts are, than to have a keyboard like that imo

You want a board with keys on it, but instead of painted letters the keys have an e-ink layer. So i open up word and the e-ink displays my normal qwertz-keyboard. When i launch photoshop the e-ink display now shows instead the e button the cuttingsymbol and by pressing it I select the cutting tool.

for example, but this keyboard or controller, will be used not as a replacement for a normal typing keyboard, but only for applications like Adobe premier, after effects, Lightroom, audio software etc.

Tactile feedback is only really useful if you can touch-type. If it's for anything other than touch-typing, you may as well use a software-keyboard on a touch-screen device, which is much cheaper and more versatile. In some very special cases it might be justified to have such a keyboard, such as in programs which permit touch-typing but also provide you with a myriad of extra functions beyond the scope of muscle memory, usually accessible by modifier keys. Emacs seems like an obvious example. Even if the keyboard may be justified in this case, you may still have an even greater cost of developing the system that will decide what to show on the keys.

Can you explain a specific scenario where it would be useful?

For example, a fast food worker has constantly changing 'buttons' on a touch screen.

In fact, anything of this design is often formed as a touch screen.

For technical professionals, you generally use a standard keyboard with key combinations for all of the functions.

For example, the key chord in Visual Studio to comment a whole section is ctrl+K, C. There are literally 100's of combinations like that. Not really intuitive. You just have to learn your software.
