I want to build something similar, but with a low boiling liquid instead of oil. It would also have a lid that works as a condenser, preventing the coolant vapor from escaping. But what would be a suitable liquid? I was thinking about diethyl ether but I'm afraid that it might dissolve some plastic components. Acetone definitely would. Alcohol is too high boiling and also conductive.
Why wouldn't you just do mineral oil?

I am not sure what the advantage would be. Phase-change liquid/piped cooling is one thing but as I understand it, immersion doesn't really benefit from having a vapor stage

It just gets hotter and hotter unless you have tons of it. A liquid that boils can't get hotter than its boiling point.

Except the boiling point will climb with pressure. You have a sealed system, so you gain nothing.
