Add "Golden Ear" to your phone, turn on wifi and then activate the golden ear ftp server. Make directories for your songs/albums and finally ftp over tasty flac, cue, cover.jpg, mp3s, etc. Don't go anywhere near iTunes or the default music app.
Download the songs to your pc and then sync with iTunes.

For whole albums I use torrents, for single tracks I use sites like mp3monkey.net and other direct download shit, or just search "songname mp3" or "songname zippy" (zippyshare is often used to host songs). I go for 320 kbps.
