what benefits are there to running a newer kernel vs an older one? For instance, Linux Mint uses an older kernel as the Mint OS is based on Ubuntu 14.04 LTS. Where as Ubuntu is moving onto 16.0 and 15.10 LTS has been out a while now.
Are there like gaping security flaws from kernel to kernel? Or is it more optimizations and such?

It's mainly drivers, performance enhancments and security updates. But running an older kernel doesnt mean you are vulnerable. If your major kernel version is still supported security fixes are backported
