The stream only has to encode the difference between the original video and the softsubbed video, which is going to be fairly insignificant unless you have a large sign every other second.
Also, I'd rather pay the extra storage cost than have my playback drop to 1 fps because some shitty softsubber decided to overlay blurs onto his signs, but that's just me.

I don't know if it's just me but I get disoriented seeing texts in plain English like that when the rest of conversations happen in Japanese. I'd much prefer the subtitles being below the original with the original text untouched, but maybe that's not a popular opinion.
