Depends on location.
Home, books, papers, etc., everywhere. Listen to classical, usually Brahms or Mahler, blaring from speakers. Drink coffee non-stop. Desk itself is oddly clean, I have other tables, and chairs, and floor space, which gets filled, but my table is usually very neat, and I clean it between tasks.
In the office I have a zen desk, more monitors than a single mac, but overall a few computers, with wireless keyboards and mice, filing system in one of my desk units, nothing stays on the table longer than needed, bottled water is the only drink. Day-to-day my desk is unchanging, always clean up at the end, and, in the morning, I quickly wipe it down with warm water and Dettol. I don't listen to music often at work, it's fairly quiet, so most of the time I just turn off all notifications and work in silence. If there is some noise, I take some isolating headphones and listen to Bach.
