On Mac, iTerm. On Linux, the KDE one usually unless it's a low power computer, then I'd use one the rxvt forks.

Look at your processes (ps).
You can also look at what your TERM related variables is set to (set | grep -i term).

With the typical machine today, you could probably just run Quake 1 in the background always, and not really tell the difference.
It would be interesting to do that and use its terminal for shell. It would probably require hacking the code a bit (I mean not just quake-c, but engine itself).
All of these are using the same two or three emulators on the back, so you guys are really just picking between different GUI wrappers.
