Assuming hard disks with an unrecoverable read error rate of 1 in 10^14 bits (100 trillion bits of 12.5TB), in a full 5x3TB RAID5/Z1 setup when a disk fails you are reading 4x3TB of data to reconstruct the failed disk. 4x3TB = 12TB which considering you're due a read error every 12.5TB is very shitty odds.

Furthermore unless the disks' SCTERC has been set, a read error will result in the whole disk that generates the read error getting dropped. At that point you've lost 2x disks from a RAID5/Z1 & are even more screwed.

The WD Green parking thing can be disabled for the drives so that they don't commit suicide.

I also have a subscription for Netflix and Amazon at some point, and stopped using them as I find more convenient to download what I want and then watch offline (hurr netflix doesn't allow offline viewing, and amazon wouldn't work on my fucking nexus 10)

1x500GB WD Blue as OS drive
2x1TB WD Blue drives as "production" storage drives for media
1x2TB WD Green as the backup drive for the 3 above.

I do light gaymen, browsing, and run Plex server on this machine. I run SyncToy for the media drives and create a new MS backup disk image for the OS drive every couple of months.

I have an external 500GB drive with critical stuff like family pictures and the like that I'm going to take to my mom's place for offsite storage next time I go over there.

I want to build a server with the purpose of running XBMC / some kind of emulation frontend for PS1/N64/MAME/SNES/NES etc games, is this doable? I'm planning on connecting a couple of PS3 pads through USB/Bluetooth for my emulation needs, are these gamepads too hard to setup on Linux via Bluetooth?

I got an old-ish system gathering dust, it's an quad core Athlon II, 4GB ram, etc. would something like that be enough to cover my needs?

I would only use one function at a time (e.g. play movies or emulate stuff), but it would be nice to use the system to torrent stuff or use it as a storage server every once in a while.

I know my way around Linux, but I have never attempted to setup a Bluetooth dongle or a ps3 gamepad on it, in windows I have to install unsigned drivers and stuff to use those gamepads, which is why i'm being cautious about the setup, I would definitely prefer to use Linux as its OS if it won't give me a lot of headaches in that department.

The recommended standard for zfs is 1gb/tb of storage.

I use PS3Media Server on a linux server and a NAS. NAS publishes an NFS share to various media files (photos, movies, music) and the linux server mounts them, PS3Media Server pushes them to my PS3s via uPnP.
