It is. If you have a quad or octoroon, most people would call it white and literally couldn't identify it as part black. But they can still exhibit traits from the black ancestor. People call it white but they have protein expressions of a black.
Race is literally just whatever we want to call people. We have genetic groups, lineages, families etc. But we aren't diverse enough to the point where being identifiable as a certain race explicitly means a lack of genes from another. No, it does not. One generation is not enough time to notice a difference in anything, especially as genes were unknown at the time and obviously genetic engineering did not exist.
It would take hundreds of generations of identification, culling, and continuous inbreeding.
For the sake of argument, let's assume that the selective breeding were to begin in 1600. Slavery was abolished in 1865. That means 265 years of slavery. Assuming a generation time of 16 years, that's 16.5625 generations. That is not enough to a) Identify a specific strain b) breed it into a specific population such that said population is sustainable without inbreeding, or c) cull undesirable traits.

Agricultural animals were bred over extremely long periods of time, like thousands of generations, to get really specific traits. Cows were selected to produce a ton of meat and milk, dogs selected for certain behavior patterns but mostly bred from three or four initial strains of "puppylike" adult wolves, horses are still just barely domesticated.
To breed a more fit, test boosted, big cocked, alpha human, you would need much more time than slavery existed in america (and I"m counting from the initial dutch delivery in the 1700s)

Culture. There's that extra calf muscle thing but that's rare even among sub saharan africans. Honestly these are people brought up thinking the only way they're going to make it in life is to git gud at a sport. Most marathon runners come from the same area of Kenya it is not a large area of Africa or a large part of Kenya. Does this mean that tribe is genetically better at distance running? Does it have to do with the fact from a young age they all have them out running long distances daily and because they have family with careers in it that chasing the dream of being a marathon runner is socially acceptable.
