I'd rather build for strength rather than building for mass.

Do larger muscles by default mean that you're stronger and more physically capable? Or is it possible to be tremendously strong without being very overly bulky?

CNS adaptation has a lot to do with it. For example, I recently got back into weight lifting and I'm squatting about 185 lbs. Before I stopped, I was squatting about 315 lbs and my legs are not that much smaller.
