Ohhhh yes, I remember that story. Miss Sheila DeVille's School for Wayward Boys by Ed Miller. I put it in the tg story pastebin circeling around /aco/. It's probably one of the best tg/tf stories ever written with a sick ass concept and amazing execution. Only problem I have is that Ed's writing style isn't exactly the best, but that doesn't matter because his story spawned 2 sequels by other writers. I could write an essay on different scenarios I like. As a whole, my preferences tend to run towards:
> magic or superscience based transformation
> a focus on the character's internal reactions/inner monologue
> subtler mental changes that work on the instinctual level rather than affecting conscious personality
I like analogues and opposites - punk guy to punk girl has some mileage, but punk guy to daddy's little princess has more potential for interesting adaptation clashes.
In my "serious" scenarios I like a certain amount of inner conflict, where the main character is being seduced by their new sensations, or by offers of power, or by their circumstances. In the "best ends" they fight through, usually remain female but gain love, success and/or power anyway. In the "bad ends" they give in to temptation and become a sexy supervillain/bond villain at best and lose everything at worst.
For more comedic, short term stuff I actually like flat out random transformations, too. In the style of Quantum Leap - press a button and get a new body for a day or two, with access to new memories and everything you need to "stay in character". You can have fun with it and do whatever you want, but before you change back you have to complete some task in the life of the girl you are - you might be a schoolgirl with an exam to take, a business woman with an important presentation, an expecting mother panicking about her first scan, a nun finalising her vows or a whore with her first client - you don't get to know until you press the button. Would you?

I tend to prefer modern day or science fiction settings, but that's flexible depending on the story. However, when the character just instantly becomes someone else and loses all their memories, it loses all appeal to me. It's not a transformation then, it's just a replacement.
It's a hard line to walk because I think mental changes, especially forced mental changes, are incredibly hot. When you have the character struggle with their own thoughts and new urges, wondering where they came from, I'm fucking diamonds. However, I prefer a "happy" ending (the character overcomes or makes peace with the changes), but having the original memories there in some way or another is crucial.
The struggle, the Fly-like transformation, the identity questions, that's what makes a story for me.

So my opinion is, that every aspect can be possible but if you revert back to your previous body, chances are you again revert to your initial perspective, but that depends on the reason behind why you like the new things and if those survive. Say if the reason you love dicks as a girl was because on your female brain there's some evolutionary blueprint of the feel and shape you are supposed to like, but in your male brain is absent, then you don't have an actual reason anymore to like it. But if the reason is otherwise or is abstract, then it might survive outside the body. So if the explanation is reasonable enough you can have both situations.

Reality bending to suit the transformation and always being a happy set up usually does it for me. Ones I particularly enjoy on Pixiv are delta-TSF, Vae (ヴァエ), and Mikaduki Neko (三日月ネコ).
Delta's works are kinda weird and surreal most the time, Vae's is oftentimes lazy but has a lot of charm in it, and Mikaduki Neko puts his whole heart into making it look like his main characters are having the time of their life.

Different anon here. I'm the same, in that I'm an entirely different person now than I was 15 years ago. But I still (just about) remember what it was like to be that person. A whole lot of traits have carried over, some things like aptitudes and skills. A whole lot of subconscious baggage.
So yeah, I don't think that's identity death. Identity evolution maybe. A gradual, coherent change, usually due to changes in environment or exposure to new experiences. That is kind of the whole axe of my grandfather/ship of Theseus thing.
Except there's some basic stuff - how you think, as in the way you shape your thoughts, how you instinctively react to new stimulus, the kind of mental habits you lean towards - that's kind of stuff that you learn before you can talk and that you can only ever build on, where even the tiniest change takes years of therapy. That's the things I point at when I think of what makes me who I am, or rather, what stops me from ever being someone else.
On the other hand this is the kind of discussion people found academic careers on and spend decades trying to find a satisfactory answer.
