I just finished watching avatar for the first time ( I started watching it ten years or so ago back when I was 16 on nickelodeon and for some reason never finished it, only got halfway through the fire book) and holy shit was that beautiful. It's one of the most gorgeous cartoons I've ever seen.

I can't agree with you on that. Any wuxia thing is going to have centrepiece fight scenes and they are a strong part of the appeal. Additionally, I think a lot of the great animation in Avatar comes from the fight scenes. The fight scenes are charged with emotional meaning more often in the first one for sure, I'm not disputing, but I can still enjoy the ones in Korra for what they are.

For example, I convinced a friend to check a sci-fi story about humanity trying to avoid, and when they couldnt, control God's final judgement on humanity. A story where the main protagonist is not heroic, but kind of insecure and depressed because his father never gave a shit about him. humanity fight the angels who come to Earth to accomplish God's will , and eventually used those same angels to further their secret agendas. A story with flawed characters who make mistakes and then have to put up with the consecuences. The main character's friend are kind of fucked up, and one of them genuinely cares about him, but unfortunately destiny makes them confront each other.
Nowhere up there I said its an anime, or that its Neon Genesis Evangelion. But i hokked him up on the story enough to push past the initial grimace upon "chinese cartoons".
