I like the style too, unfortunately I don't foresee much stuff in that style getting made. Mostly because most anime studios want to play it safe, they know that the majority of the market for anime is people who want moe garbage, cute girls doing cute things, etc. That's why stuff that tries to be unique in terms of either writing or art style generally does worse than all the 'mainstream' (for lack of a better term) shows that look identical and lack much meaningful content. If you want something that has it's own style or is actually well written you have to go looking for it 'cause it's not going to be what's popular.

Problem was never about "moe"
Since the beginning "moe" was there, together with kawaii, food scenes, schoolgirl hijinks, mechas and many others anime tropes
Problem, almost like cartoons, is how they stopped animating and producing it on pencil. Making the overall result looking generic, and without any heart.
Now everything has GRITTY filters or 3D everywhere. Same can be said about the constant on-model look, and flat action. Just look for yourself, a bomb can explode and the clothes of the characters, or anything on background, will never move. Only COOL effects will show up.
The exactly opposite happens in the 80's. Everything was fluid, even if sometimes campy and frequently reusing scenes.
A friend recommended "Madoka" because it had "good animation" and I got shocked. Shitty was terrible. Shady filters everywhere, bad 3D every "serious" scene and really boring flat fighting scenes. The girls have long hair, dresses, and all the magical girls set, and still nothing ever moves but their mouths.

I mention moe just 'cause it's the bottom of the barrel. Yes, it was always there, but it's worse now IMO. People will watch shows simply because of cute girls in them, and that coupled with the laziness in animation that you mentioned just results in a show that took very little effort or money to make, and if you don't spend a lot of money you can get a bigger return on investment.
But people buy it up anyway. If you look at what's most popular none of it is well animated or well written, but people buying it tells studios that they can just put no effort into their shows and make a profit anyway. I don't think shitty moe anime is the only problem, but it's certainly part of it.
I guess it's the case for most mediums that the best stuff isn't what's the most popular, but still, people should demand more from their entertainment/
