Imo it'd be cool if after we got Eddie as the antagonist for a Spidey movie, where he's really well done; but in the end is defeated and the symbiote given to shield, they bond it to Flash and send him on some missions but had secretly been breeding the symbiote, resulting in the symbiote family, which escape and either find civilian hosts or drive their shield agent hosts mad. Then Flash realizes he's gonna need some extra help for this fight so they get Brock out of the raft prison to team up with Flash while wearing the toxin symbiote.

I think for Spider-Man 3, it was out of necessity. Technology hadn't progressed far enough to make Venom as physically imposing as he should have been without looking completely ridiculous.
Also, Venom's size is dependent on the wearer, and the actor was as skinny as Maguire. When Peter uses the Venom suit, he's still his usual size.
What they need now is to get find an actor who's huge enough to be Venom. Which probably isn't gonna be easy at all.
