More or less. The Jedi knew he was a Sith, though for the longest time they didn't know his Sith name. Apparently they also weren't really clear on where he stood within the Sith heirarchy: if he was working for Darth Sidious, if Darth Sidious even really existed, if Dooku was actually the Sith master and thus the master of Maul, or if Sidious and Dooku were both Sith Lords but not working together. When you throw Maul back into the mix, that just confused them even more.

Hasbro's started clearly separating toys meant for kids and toys meant for collectors. They realized kids will still buy the figures even if they're cheaply painted and have very little articulation, so that's why the main figures have regressed. It would be really hard to get Luke involved directly in the plot without him ending up dead. At this point, he has decades of time learning the force, and he was canonically super powerful just at the end of Episode 6.

During the Clone Wars when Palpatine was living a double life as High Chancellor and secretive Sith Lord mastermind, was there anybody who allied with him on the dark side who knew that he was playing the role of the kind humble chancellor of the Republic? The effects in the OT don't hold up because they were practical, it's because they had been doing practical effects for decades at that point and were released a few years before the film industry began experimenting with cgi.

They used less CGI than most people think. A lot less, actually. But it was using modern cimemotography and digital effects (though what was cutting edge at the turn of the century doesn't hold up as well today).
For instance, compare the digital effects and CGI replacements in TFA compared to the Prequels. It's all still ILM, the effects company Lucas founded to do his on-screen wizardry. The current use is far more sophisticated and refined than it was in 1999-2005, and even then you can track how their effects improved with each movie.

Reading this comic makes me realize something about Luke and why he kid struggled so much with the Force.
He really did have too much Uncle Owen in him.
As much as the vocal minority hates Rey she grew up on her own with stories. She was still very much like a kid in so many ways. Chomping away at her meals like a kid, licking her plate clean, wearing an old pilot helmet and dreaming of getting the hell off of Jakku. Hell, even the way she slides down dunes. She has the stories of the Jedi, believes they are stories until some old guy says they're all true. She believes him. She has no concept of what her limitations might be.
Ezra was on his way to becoming that. Again, no parents, left to his own. He lived like a street rat without a formal education, did what he pleased, and managed to flourish. When he sees what Kanan can do he tries to emulate it. If it weren't for the awkward teenage boy qualities getting in his way... But at least he's gotten a lot better.
Luke, however, had Uncle Owen grilling a harsh style of reality in Luke's head, verbally beating the dreamer out of the boy. Luke struggles to reach out to something greater, something intangible and wonderful. Even after he sees what Yoda can do he can't believe it.

Well he did what he could but he was as far from a Jedi as could be, and wanted Luke as far from it as possible. You get that line in the OT when Obi-Wan tells Luke, "That's your Uncle talking." While Luke has a lot of Anakin he also wound up with a lot of Uncle Owen.
One of the reasons the Jedi like to start training so young. Get to people before they have any notions of what is possible or impossible. Plus it helps to fully indoctrinate them into the Jedi philosophy. Oh, and keeps them from any outside attachments for the most part.

Nothing can be said just yet about Sheev knowing all forms, but Yoda being the Grand Master of the Jedi Order, should be able to know all forms. Thats why their lighsaber duel in the senate was so close.

This is only speculative, but when the need arises, he only keeps a one lightsaber on his person and two for full out sheeving(as in the case for Maul and Savage). One was lost during the fight with Mace. He probably still has the other one though.
