Bounty Hunter's is fun, Dengar, Bossk, and Greedo shitpost at each other in the margins while Boba is an edgemeister, there's lots of talk of juicy tech and being a hunter sounds pretty comfy, you get decent cuts and you can get a lot of work-related tools from the guild itself. There's also a death watch propaganda pamphlet in it.
Empire is kinda dry, there's a lot of pages that are literally just battle formation make-ups, but there's some interesting stuff like info on Stormtrooper kits, the actual 'normal' military, and the inner workings stuff like Imperial Intelligence and their propaganda wing. There's also a full page portrait of Sheev right at the start of the book and the implication that propaganda paints Vader as almost Captain America-esque so there's that.

One of the first things they do is kill Chewbacca by quite literally throwing a moon on him. They're unstoppable and unbeatable for no real reason and then eventually suddenly start becoming beatable.
Plus, they introduced the stupid retcon that Palaptine wasn't building the Empire because it's the goal of the Sith, but rather because he somehow magically learned about the Vong and was arming the galaxy for them. The Death Stars weren't to rule the galaxy with fear, they were to combat the Vong.
