I want to believe that will be resolved somehow. Whether it's really Shermie's son, or something stupid like Bill getting turned into a baby and sent back in time. Or, fuck. Even a fourth Pines sibling. I don't want to accept they'd date the scene so obviously without considering the implications. They were so good about seeding clues about Ford throughout the show; surely they'd at least have worked out his and Stan's timelines, right?
But deep down, there's this suspicion that the real reason Alex refused to discuss the baby was because he realized the writers botched the timeline irreparably some time after completing season 2. So he'll leave it unresolved forever, and call it one of the mysteries that was never meant to be explained.

I mean, I'm not going to be furious at Alex if it goes unresolved. It's just a weirdly specific misstep, and one that he drew attention to himself.
Truthfully, the only thing that would really annoy me about it is Alex's coyness about answering the question if it really was a simple error. Of course writers are human and fallible. But playing a mistake off as part of a clever plan, and then not delivering on that, would be pretty disappointing. I don't think Alex is that kind of guy.

Yeah. It's hard to second-guess what would fit into all that space when we have no idea what additional plot points (if any) were scrapped from the original draft. If a third season had happened, season 2 might have been much closer to season 1's pacing.
Looking at the episode list, the best way to fill out the back half of season 2 might be a 2B mini-arc featuring the reveal of the Society of the Blind Eye and McGucket's backstory.
After the events of SotBE and NMM, another episode where Dipper and Mabel try to use information from the laptop to track down the Author might be nice. And maybe throw in an episode before NWHS where Dipper or Mabel experience one of the gravity anomalies, and they start to look for answers. what is there left to reveal? the plot is actually really straightforward - ford made a deal with the devil and got tricked and sucked in a portal, stan spent most of his life trying to rescue his brother, the twins show up in town and are the catalysts for the portal being completed, ford comes back and the dimensional tear allows the devil he made a deal with to enter the world and fuck shit up. now its up to the cast to stop him and try and put reality back to normal.
there's not a big mystery hidden here. there never really was, there were mysterious elements in the show relating to that plot but they weren't really the driving focus of it.

I kind of like the idea if you relate that to their wheel symbols it shows a bit of insight into their character. Ford embraced his anomalous nature and turned his back on his family so his symbol is the 6 fingered hand. Dipper has a birthmark that sets him apart but he ultimately sides with his family in situations so his symbol is the pine tree.
