So was this a long time coming or did she just fucking snap under the pressure and paranoia of being Fire Lord? Her "reign" lasted all of like 4 hours before she was overthrown and her decent into madness was damn near instantaneous. Way to fuck that up hardcore.
It was always there. When she does her Fire Kata in front of the granny twins she has a lock of hair fall in her face. She looks defiantly angry at that one bit of hair getting in the way and from then on at the slightest misstep she goes mental. But the snapping doesn't really happen until Mei's and Tai Lee's betrayal.
She respected Mei greatly and may have been in love with Tai Lee. When the betrayal happened the idea that one thing out of place has ruined her went on to consume her. She chops up her hair, banishes a handmaiden and One of the Granny twins because she's trying and failing to get total control and it's driving her out of control and out of her mind. The behavior was there all along, the events just intensified it up to the point of her total breakdown.

That bitch was born crazy and got worse and worse the entire series.
It was always there, you see hints of it here and there from the very first scene she appears in and throughout seasons 2 & 3, but the writers didn't give her enough characterization/development until the last minute so the final breakdown seemed like it was coming out of nowhere.

The Suki thing seemed really forced since they only had like 2 interactions for the entirety of the show up until halfway through Fire. because her whole life was spent towards the ambition of becoming firelord, and her means were through backstabbing, front stabbing, and general dickishness, as easily portrayed by her father and grandfather.
when suddenly handed everything she wished for, she had no endgame beyond it, what she wanted to do with the country she would rule, nothing. just Becoming The Fire Lord was the extent, and now that she had it, all of that backstabbery she'd been raised to emulate came to the front. so, she saw it everywhere, trying to take her position from her and earn her father's disappointment that she was somehow unfit or unworthy of it.

while the character traits and backstory elements that would culminate in her breakdown were established early on, the writing team neglected to do anything with them until they realized that they needed to give her a little extra character development so her final confrontation with Zuko would have more emotional impact than her two dozen previous confrontations with Zuko. so they rummaged through her prior character development moments and used them to create a plausible excuse for her to break down and become a tragic figure instead of the largely one-note villain she had been up to that point. i dont think they originally intended for her perfectionism, strained relationship with her mother, sociopathic father, etc. to ever amount to anything and only tried to connect those elements to give the final showdown more pathos

Her reaction when her mother/delusion mentioned Ty Lee was especially bitter. She constantly associates with Ty Lee much more closely than Mei. Her father and Ty Lee are the only one she appeals to for approval at any point in the series. Her circle is very small and Ty Lee is the one that gets closest to her. Azula was ready to kill Mei when Mei defied her. When Ty Lee betrayed her she had every reason to kill her there and then. Nick censorship aside she did immediately soften and put them in jail.
