What do i do with the yolk when i use egg white to bread chikin?

use it as an emulsifier :
- salad dressing
- mayo
- buttery yolk water
if i'm using several whites, i'll beat the yolks in with a complete egg or two and make extra-yolky scrambled eggs.
when i needed a dozen egg whites for an angel food cake, i made lemon curd with the yolks.
if it's only one yolk, i'd probably just throw it away. eggs are incredibly inexpensive.
