i have some marinating in fridge right now
>3lbs oxtail
>trim a little bit of the fat off them
>let them soak in salt and lemon juice for about 10 minutes
>wash off
>season
>salt
>black pepper
>onion powder
>garlic powder
>all spice
>thyme
>soy sauce
>worcestershire sauce
>green/red/orange peppers chopped
>onion chopped
>toss them around
>marinate in fridge for 4 hours or overnight
>time to cook
>oil
>onions chopped
>let oxtails brown but not thoroughly cook
>add flour to create gravy
>add marinate
>add water
>add 1 scotch bonnet pepper (optional)
>stir
>cook for 4 hours
>add dice tomatoes
>add lima beans (butter beans)
>stir
>10 minutes later
>done
