This is "Algerian sauce", basically mayo with algerian spices blend and onions.
Also this is not a classical French kebab, it's more like a bastardized burger-kebab thing that sandniggers tries to sell to us (and it's fucking delicious nonetheless).

kebab (kebap) should be the meat
doner kebab is kebab + bread + veggies and sauces
(pita) gyros is very often pork. you won't find pork in kebabs, that's haram. also the gyros is pretty strict in composition, tzatziki fries tomatoes onions and a little lettuce. kebabs instead vary very much even in the same city.
