gonna keep posting anyway. it's been ~4 hours, pretty much ready to decant the stock. Once I'm ready with a pot of clean broth I'll let it settle and skim the fat.

there's a big pool of sauce under there. I mixed it all up while eating. The sausages were perfect, fork tender and still with that roasted taste.
