Although it doesn't directly mention bread, you can learn a lot about baking and even cooking in general.
Warm Bread and Honey Cake, (Chandra) is excellent and covers a wide variety of breads and cakes without ignoring the basics.
Bourke Street Bakery is decent if you want into artisan baking and sour dough techniques.
