Browning the meat, I forgot to add the ginger and garlic to the oi before adding the meat so I will just be adding it when I add the spices and habanero; won't be as good but it'l do.

I find mince doesn't stew well, I either cook mince hot and fast, or slow cook a cut of meat with some grain
