Red-pill me on chestnuts, /ck/.

So far all I've read is:
>boiling makes them soft but sweeter than roasting
>roasting them makes them slightly less sweet but with a roasted flavor
>a good percentage of raw, loose chestnuts will be bad (mold, worms, shriveled up, etc)

I need chestnuts for a stuffing, and possibly cookies.
I assume boiling is easier, but doesn't the song say "chestnuts roasting..."?

I prefer roasting personally because I find that chestnuts don't have much flavor to begin with so roasting really helps to bring that out. They will still be plenty soft to use in other recipes. Be sure to score them first of course and try to by Italian origin rather than the far more common Chinese origin chestnuts.

If you get a chance to get to NYC during the silly season get some roasted chestnuts from a street vendor, they're usually found around 57th st and 5th ave down to about 48th st and 5th ave in Manhattan. The roasted peanuts are good too.

Chestnuts I usually go for $2/bag, the peanuts $1 or $1.50.
