There's not much to it. Watch the NGE series, then EoE.
Some people will tell you to watch the first half of EoE, the last two episodes of NGE, and then the second half of EoE. Don't do that. Don't watch the Rebuilds either!

2 - Death & Rebirth is optional if you're a first timer
3 - Watch the End of Evangelion
4 - There's the Manga which you might want to check out if you end up enjoying Eva.
5 - And there's Rebuild but that's a different beast.

Which is why I never bought the argument that detractors make that the TV ending was just because of budget reasons since the second part of EoE becomes the same kind of thing too, just with nicer animation as you say. I'm sure budget meant they had to cut the parts that would have looked like Rebirth/Air, but both endings feel like the proper ending.
It was budget and time constraints.
The stuff from EoE was generally edited in later.

Generally I imagine this would mean she wouldn't care for weapons in the first place; but since she's Nerv personnel and a pilot and as such she absolutely has weapons training, then it would have the opposite effect: She would learn as much as possible about them and would always handle them properly.
