I don't have any plans when I paint. I just tack the canvas up and mix up a big pile of color and set into it. And as it gets further and further along things change out of necessity, the colors I start with often grow murkier, the lines I put in begin to recede from or push back into the colors, somethings I put in stay in, others are removed completely.

Then it changes again, something occurs and the painting starts to hold up again, and you swing back to the other extreme.
It's only when a painting is finished that you're able to breathe again, go out and socialize, spend time with your friends and family, eat regularly, sleep regularly, fix the things that need to be fixed, like your car or a table or whatever. And you get a good couple weeks of that before the suffocating need to paint takes over again and you start the cycle all over.

If you can feed yourself and you think it tastes good, then you can cook well. The thing that most home cooks don't realise about cooking professionally is all about how we do what we do.
Imagine that, in a full working day, you spend 2 hours preparing for the rush of a service. Getting everything set and ready so that your job is as easy as you can make it. Then, when the rush hits, you just stop thinking. You become more a production line than a person at that point. Every dish you put out has to look, taste and be sized the same. Up to 30 of a single dish, all done the exact same way. If you mess up, you have to start over and set everyone else on the line back. After 4 hours of acting that way and the last of the food has gone, you look over the section and are immediately in damage control, getting items for the next day written down to be done by the morning prep crew. Then the cleaning happens and you wash away the mistakes, the past and you lose yourself.
That was my life for 5 years. I regret none of it and I would do it again simply for the people I met, the lessons I learned. I had to stop because I worked myself into hospital for the third time.
