For practical purposes I always ask for medium in any place that kinda looks like they won't actually deliver in terms of doneness, surprisingly this is a lot of "steakhouse" restaurants, which acomplishes two things; 1) Cooks tend to to cook by default the way they know best when you ask for medium, so you might get a slightly overcooked medium rare for instance which is a lot better than undercooked bringing me to point 2) it's a safer range in placfes where beef quality might be iffy... I'm a big fan of filet (mignon or Chautebriand) so as it's gone out of fashion not every place that offers it knows how to cook it tho I tend to follow this simple rule with all cuts of beef. An even more important rule, never fucking send anything back to the kitchen, I see many wannabe conoisseurs doing this all the time which is fucking dumb as on principle kitchen staff will always mess with food that gets sent back or on second orders... The easier you make it for them the cleaner your food and because telling the difference is more forgiving medium is easier to cook...
