Are you kidding? Tips are how every service industry should work, in an ideal world. Most people feel obligated to pay at least a certain amount, so it provides steady income. A lot of people with shittons of disposable wealth tip way more than they have to, which helps with redistribution of wealth. Service employees are incentivized to provide higher quality service because a happy customer gives a better chance of a large tip, while an upset customer might just not pay shit.

If all of the service industry functioned on a tip model, the bar for good customer service would be raised, pay all around would be higher, and people working in shitty jobs would have pride in what they do. If you worked in a print shop and busted your ass on some big order for two days, and made it fucking perfect, and then that customer dropped you like a 200 dollar tip, you'd feel amazing. You'd be so proud. The way it works now, there's no incentive for you to work fast or do a better job. You're going to make the same 9 dollars an hour either way. And most of the service industry is like that, there's no REASON to even give a shit about your job, or take pride in what you do.

I don't tip because the money go to the servers and nothing goes towards the ones that actually make my food. I rather go to the balcony, say what I want and come back later to pick it up than paying someone to bring it to me and be paid more after tips than the cook itself.

I pay my servers 22 dollars an hour. They can still accept tips, but the tips come to the counter where the customers pop it into a slot with their server's name. I take a portion of it, and in turn base their performance on the amount of tips they get. The highest tipped waiter can keep his whole tip jar for that week.

After I adopted this my profits has gone up about 6~7% since last quarter.
