Cuz I like the taist if meat. And personally if I were to cut meat out of my diet I'd just go Vegan
Maybe try some tartare. Try sashimi if you're more daring. I had some similar fears of handling raw meat when I started cooking because it always felt cold and slimy, but it went away after handling it for a bit.
