I just don't get it. How can a human kill giant, demons that can regenerate? If Guts struggles with these lesser demons all the time, how in the hell can he kill a Godhand? And why hasn't the behelit activated if he's bleeding all the time?

It's pretty simple. He can kill most monsters and apostles with relatively simple ease. Especially now that he has the Berserk armor, though it of course takes a long term toll.
His sword has killed so many supernatural beings that its quality is enhanced for that purpose.
All he really has to do now get close.
Behelits don't activate automatically, they're meant for a specific person (unless that's just crimson behelits, but I think it's all of them).
