It's gonna be a narrative mistake if Hisoka dies. Yeah I get that it's a good twist, it subverts the audiences expectations, etc etc.
But Hisoka brings so much entertainment and whimsy to any scene that he's in. He has so much more to offer to the story, and him and Gon still have a score to settle. I get that HxH isn't classic Shounen, but in this case I firmly believe that going the Shounen route with Hisoka vs Gon is the best way to go about it.
Here's hoping that both Hisoka and Chrollo survive and they can both contribute to the story in a meaningful way in the future.

Togashi has such a strong ambivalence towards death. This is reflected in his characters..pretty almost every significant character is not afraid of death.
Gon - He definitely risked death multiple times, and also of course the Gon-san thing. Gon is a character who's emotions and passions greatly override any fear he has of death.
Killua - All he could think of on the brink of death is "sorry Gon...sorry I couldn't be of more use" or some friendship shit. He was very beautifully drawn here.
Hisoka - "Well, if I'm going to die anyway..."
Phantom Troupe - None of them batted an eye at their fortunes. They give zero fucks about death.
Meteor City - In fact, their entire home country gives zero fucks about death.
Kurapika - Honestly, he probably wishes he was dead, but he just can't because he needs to avenge his comrades. Going against the Phantom Troupe as a newbie hunter, and going 1v1 against Uvo right off the bat shows he's like Gon, his passion (anger, in this case) greatly overrides fear.
Royal Guards - Orgasmed from sacrificing themselves to the King. Obviously don't give a shit about anything except the King.
The King - Was just like "...ah well. I was a bit of a dick anyway, at least I get to spend it with Komugi" while he died.
Komugi - Seemed to believe she never deserved to live in the first place.
I feel like Togashi went through a lot of pain..so much pain and suffering that he ended up capable of writing with this type of mindset.

It's kind of that reason there's no really better occasion that to make him die here. Hisoka is a really entertaining character, but his role in the plot was just "being there" after Gon got his payback in Heaven's Arena. He was a temporary ally in GI and helped Illumi a bit later, but that's it. Compare that to Chrollo, leader of a band of thieves hyped very early and still has a fight with Kurapika to finish.
I think dying there for Hisoka is pretty much the perfect way to end for him : crazed clown with a sense of bloodlust dying in a fight against a stronger enemy. It also gives Chrollo much more weight to the threat he represents : killing a long running liked character is much more impressive from a narrative standpoint than killing some mooks like the Troupe did in Yorkshin.

Don't confuse references to it with actual build up of tension/anticipation in the audience. It takes more than just mentioning it every so often to get the audience emotionally invested enough to give a death impact.
Togashi is very good at impactful deaths though, I doubt he would skip building tension without good reason. I don't think either of them will die for this reason. Calling it a deathmatch doesn't mean a death has to happen or he's some sort of hack, it just means things don't always go the character's way.

I think it's what he's going for in some degree. Chrollo spent his time getting a set of particular abilities and developed an entire strategy around using them, with the perfect setting to boot. Obviously, there was a LOT of preparation behind this.
Hisoka has strong battle sense as showed by his ability to somewhat adapt to Chrollo's shenanigans but the way he was slowly hopelessly outmatched by Chrollo's bullshit really showcase how scary Chrollo is as a planner, and eventually sticks to one of the main aspects of HxH, that careful planning will always give you a strong advantage. Gon / Biscuit / Killua vs Genthru's team is another exemple of this, and Morel's entire strategy is one of the reasons everyone didn't get completely slaughtered while invading the Castle.

What's strange about it is the character himself, not the scenario. Some overconfident, psychopathic killer losing to someone stronger isn't something new or original but it's the fact that it's this character who has been looming around since the beginning who has been involved in much of the series in at least some way (Chimera arc not withstanding). A new saga is beginning and it's surprising to see him potentially die at the very beginning.
He's had a significant amount of dialogue throughout the entire fight, which has been almost entirely from his perspective, but he's been on the defensive frequently and become cornered.
He seems like one of those characters who sneaks his way around until the end despite the odds so seeing him abruptly get the fight he wants so soon and get put into this situation is disheartening for his fans.

His personality is one of an absolute manipulator. He manipulates people to make them do thing for him even without nen. If on top on that he would be a great duelist, it would be a boring generic character that is just good in every aspect.
I'd see him have some bullshit hatsu, like one cannot use violence against him. It would be a callback to Yuyu Hakusho, and it would make sense for the character, as he fight with his intelligence rather than his fists.
