Watch Utena. The director of Utena was closely associated with the director or Evangelion and there's some links even though the shows aren't similar at all on a superficial level.

Azumanga Diaoh is pretty hardcore if your looking for something deep and psychological. Just a warning though, it can get fairly dark at times.

Try them anyways. They're just as great, visually proficient and thematically complex. It's just that they have humor as well. It's kind of weird to avoid experiencing something great because of that. Imagine if someone said they won't check out evangelion because they heard it has action scenes.
